Bombay Bacon Toastie

A recipe taken from the streets of Bombay, with our own porky twist!

 
INGREDIENTS & EQUIPMENT

1/2 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

Chopped green chilli - to taste

1 tsp fine black pepper

1 tsp chaat masala

1/4 red onion, diced

1 handful of chopped coriander

1 handful of bacon chips

Butter

2 slices of white bread

A weight, or something to press down on the toastie

 
INSTRUCTIONS
  1. Combine all the ingredients, except for the butter, in a mixing bowl. Set aside.

  2. Spread butter on the inside of both slices of white bread

  3. Start building the sandwich with the cheese mix, it's ok if its heaped and overflowing.

  4. Heat a non-stick pan on high, and spread some butter on it.

  5. Reduce the heat of the pan to low and gently place the sandwich in the pan.

  6. Place a heavy weight on the sandwich so that it is pressed down. If you don't have a kitchen weight, you can easily substitute this with a pot, or a brick wrapped in foil. Be creative :)

  7. After a few minutes, the cheese should be melty and oozing. Remove the weight, and butter the top side before gently flipping it over. The toasty should be a golden brown by now.

  8. Place the weight back on and cook the other side.

  9. Once the other side is golden brown as well, the sandwich is ready.

  10. Cut into triangles and serve immediately, but careful, it's hot!
